Foods For The Road

  1. Deli meat and deli cheese slices (both GF) roll up together for a high protein meal.
  2. Hamburger buns from Ener-G are sealed and last a long time.
  3. Homemade muffins last several days, but don't make them with fruit or they'll get soggy.
  4. Mix nuts with dried fruit or with gluten free cereal and keep it in a ziploc bag.
  5. Rice crackers taste good with slices of cheese.
  6. Some gas stations have hot water which you can use to mix with GF soup mixes. Bring in your insulated mug for the water...but leave the soup outside because many stations won't like you to bring it in.
  7. Tuna in pop top cans (GF, of course) can be mixed with individual packets of mayonnaise for a tuna salad.
  8. Take your GF dinner leftovers on the road in an insulated mug for lunch.
  9. Freeze small cardboard juice cartons or plastic bottles of water and store them in your cooler. It'll help keep your food cold - and you can drink the juice/water when it melts.
